Great Weight Watching Recipe

Kathy's (my sister)Chicken Chili

5 chicken tenderloins

3 cans cannelini beans (navy, northern are fine too)

4 cloves of garlic

1 medium onion

2 teas. oregano

1 teas. cumin

3 tbls. olive oil

3 cups chicken broth

shredded cheddar cheese (optional)

Cut tenders into bite-sized pieces and cook in 1 tbsp. oil. until done. Remove from pan and set aside. Add remaining 2 tbsp. oil to pan to heat and add onion and garlic and saute until tender. Add cumin and oregano to onions and continue cooking on low for a few minutes.

Add the reserved cooked chicken, beans and broth. Cook on medium heat until it begins to boil and turn to simmer for at least 3 hours. Be sure to cover pan.

Top each serving with a little shredded cheese.
