Meringue Cookie Recipe

One of my husband's favorite sweets is meringues. They are considered a heart healthy treat as they do not contain butter or oil of any kind and are made from egg whites and sugar. They are light and fluffy and you can color and flavor them any way you want.

Here is the recipe for Peppermint Meringues

Items you will need:

Mixer, medium bowl, foil, cookie sheet
2 eggwhites,
1/8 teas. salt
1/8 teas. cream of tartar
1/2 cup sugar
10 peppermint candies (crushed)
Red food coloring (optional)

Line your cookie sheet with foil and turn your oven on to 225 degrees.
Place egg whites in bowl and let set until room temperature (this helps them to fluff up better). Beat egg whites until just foamy and add the salt and cream of tartar.
Continue beating until they become stiff high peaks (this will take about 4 min.).Gradually add sugar, a tablespoon at a time as you continue to beat the eggwhites. Add a few drops of red food coloring and beat until mixed and turns pink.
Gently fold in the peppermint candies that are crushed.

If you like, you can use a large baggie with a hole cut in the corner to pipe out the meringue onto the cookie sheet. Otherwise just put large spoonfuls approximately 2" apart on cookie sheet.


Place cookies in your oven and bake at 225 degrees for 90 minutes. Remove from the oven but do not take them off the foil until they have completely cooled. Here is the end result.



My brother-in-law likes his with cocoa added to the recipe along with some chocolate chips for a different flavor. Try new flavors and colors, it's fun and healthier than many other snacks.

Love merinques! I even like them plain with just a tad of vanilla - the mint sounds good tho - mmm might be a fun one for Christmas this year.
